Yesterday we celebrated my mother-in-law’s birthday with a lovely home-made birthday cake and her requested favourite tea “Chicken Curry”. I always buy a full free range chicken, rather than just buying chicken breasts. The price tag may appear to be expensive, but one whole chicken will easily make three meals to feed our family of five. We take the breasts off to dice up for a chicken curry, we then roast the legs, thighs and wings with some veg for a healthy tray bake another night and we boil up the carcass with a few vegetables to make some delicious stock, which will form the base of a lovely soup or risotto.<\/div>\n
