How to make a Rainbow Cake<\/td>\n<\/tr>\n<\/tbody>\n<\/table>\n
\nWhen I was growing up my mum would always bake us home-made birthday
\ncakes<\/b>. My favourite was a \u201cFairy House Cake\u201d she made and decorated
\nwith trifle finger sponges for the roof and biscuits and sweets for the windows
\nand doors. She also became famous for her \u201cHedgehog Cake\u201d which my sister had
\nseveral years on the trot. I have happily carried this tradition on with each
\nof my own three children and I have managed to bake them all home-made birthday cakes<\/b> as well every year so far. It\u2019s become quite an event now, going
\nthrough all of my baking books and browsing through Pinterest for ideas and
\ninspiration, in the run up to each of their birthdays. <\/div>\n
\n<\/div>\n
\nMy son Liam turned 7 recently and he requested a \u201cRainbow
\nCake<\/b>\u201d. He has a real fascination with all things rainbow at the moment.  <\/span>I think it might be something to do with the
\nlure of all of the treasure to be found at the end of them. Living by the sea
\nwe are lucky enough to see rainbows on a fairly regular basis and we\u2019ve spent
\nmany a happy hour digging down on the beach for \u201cburied treasure\u201d left behind
\nby rainbows.<\/div>\n
\n<\/div>\n
\nI encourage my kids to have as much input into their cakes
\nas possible, well as much as my skill levels can handle. Liam was full of ideas
\non how he wanted his rainbow to look. He requested a sponge cake with a rainbow
\nrunning over the top of it. He wanted the rainbow to be made out of skittles,
\nalong with little marshmallow clouds, oh and maybe some chocolate on their
\nsomewhere as well!<\/div>\n
\n<\/p>\n

\nHow to make a Rainbow Cake<\/h3>\n

\n <\/h3>\n<\/div>\n
\nThe cake was for Liam\u2019s birthday party with his school
\nfriends a couple of days ahead of the actual day. The party was on the Saturday
\nafternoon, so I baked the sponges on the Friday afternoon and then decorated
\nthe cake on Saturday morning. I used a basic Victoria Sandwich recipe<\/a> for the base of the cake. I made 1.5 times the quantity, as
\nI wanted to have three layers of sponge. I divided the mixture into three and I
\nadded in a few drops of different coloured food colouring to each before baking
\nthem in the oven. I then allowed them to fully cool down before assembling the
\ncake and adding the icing.<\/div>\n

\nHow to decorate a Rainbow Cake <\/h3>\n

 I sandwiched the layers together with some raspberry jam. <\/p><\/div>\n

\nThen I spread butter icing <\/a>coloured with a few drop of blue food colouring all over the cake, trying to get this spread as evenly as I could
\nacross the top. I used a large palette knife to achieve this. <\/div>\n

\n<\/a><\/div>\n
\n<\/div>\n
\nI wasn\u2019t as
\ncareful with the sides of the cake though, as I was going to be covering this
\nup with some chocolate fingers, which I did next. <\/div>\n
\n<\/div>\n

\nI did have a bit of panic
\nhere, as I hadn\u2019t bought enough to go around the whole cake, but a hasty trip
\nto the corner thankfully sorted this out. <\/div>\n

\nI then set on creating the rainbow with the skittles. I had
\nbought 6 large bags of skittles to ensure that I had enough of each colour and
\nof course this turned out to be far too many. This wasn\u2019t a problem though, as
\nit meant I could eat a few along the way to keep my energy levels up.<\/div>\n

\nI also
\nmade a party game<\/b> as well out of some of them. I added 174 skittles to
\na jar and then asked the children at the party to guess how many were in the
\njar and then the nearest guess won the jar. I also made a Raindow I-spy bottle<\/b>
\nfor the party, after being inspired by this post from youclevermonkey<\/a>, which
\nwas posted to my Facebook page <\/a>recently.<\/div>\n

\nI then added on some mini marshmallows for the clouds and
\ncut out shapes using green ready-made fondant icing to spell out Liam and a
\nnumber 7. I took candles along to the party as well to add when we got there.<\/div>\n
